Granny's old Recipe for Pancakes and Scones

PANCAKES

1 Mug plain flour,1 teaspoon cream of tartar, 1/2 teaspoon baking soda, 1 tablespoon syrup, 2 eggs and milk to mix.

Sieve dry ingredients, add syrup and eggs and enough milk to make a fairly thick batter.
Drop tablespoons on to a medium hot girdle. When bubbles appear turn and cook other side.


SYRUP SCONES

1 Mug plain flour, 1 teaspoon cream of tartar,1/2 teaspoon baking soda,
a knifeful of syrup,milk to mix.

Sieve dry ingredients,add syrup and enough milk to make a soft but not sticky dough.
Roll into a round and cut into 4. Cook on a medium girdle.

Leave both to cool in a dish towel, if there are any left. They are great just off the girdle.

There was some kind of a fund raising event in Sorn many years ago, perhaps for the bowling green, perhaps another project. My mother was making Scones and Pancakes every day for weeks, to sell for funds. There was a lot of disappointment when the funds were raised and she stopped her baking!!


OATMEAL SOUP

1oz oatmeal, 1 onion, 1oz butter, 1 pint chicken stock,
1\2 pint milk, salt and pepper, cream / optional

Chop onion finely, and soften in melted butter. Stir in oatmeal and cook for one minute.
Add chicken stock slowly, and simmer for 30-45 minutes stirring frequently.
Add milk before serving just to heat rather than boil.
